- Prep all of your vegetables the night before… Christmas day is no time for chopping and peeling, thanks very much.
- Make sure everyone has a full(ish) glass of champagne!
- Make and freeze your bread sauce weeks in advance. Do remember to defrost on Christmas Eve though.
- Timing is everything – don’t wing it and guesstimate, unless you want soggy sprouts.
- Make pies from your turkey and soups from its stock.
- Ensure the carver has experience: nothing more upsetting than a beautifully-cooked bird hacked apart in lumps.
