A fantastic opportunity has arisen for a passionate cook to have a part time Permanent role 20 minutes outside of Edinburgh for a wonderful household. To start in September, or before that if available.
The role will be 24-32 hours per week spread across 3-4 days per week. Weekends will be expected to be worked, but on a rota as you will share the role with another chef so you can alternate weekend shifts/holidays etc.
You will be catering for writers/authors on a retreat - 5-6 writers will come at one time for 5 weeks - they have about 6 different retreats over the course of the year, all lasting 5 weeks. Breakfast, lunch, dinner. Dinners tend not to be too late, and there is a calm, quiet, relaxed environment at all times.
The cook will be doing ordering, shopping, cooking, informal buffet style food - might be occasions where it is more formal when the board of directors visit and the cook should be capable of ramping up to this. There are guests coming from all over the world so a good knowledge of different cuisines important, healthy and seasonal food is key, including vegan and vegetarian food. Must also be able to cater easily for differing dietary requirements. Relatively relaxed style food but done really nicely.
A strong understanding of various cooking techniques and the ability to use and maintain kitchen equipment are essential.
You will share the ordering/kitchen cleaning with the other chef - you need to be able to work really well as a team together - you will work on different days but must be able to liaise with each other over menus, stock, ordering, hygiene standards etc. This involves clear communication and teamwork to ensure the standards of the food being presented to the guests lives up to the established standard and enhances their experience.
Job Duties will include: Preparing a wide variety of dishes, ensuring they meet high standards of quality and presentation. Cooking breakfast, lunch and dinner and catering to any specific dietary requirements/tastes/dislikes/likes Proper storage of ingredients, cleaning of equipment, and ensuring hygiene standards are consistently met. Keeping a clean and organised kitchen whilst adhering to health and safety regulations will be critical to this role. Ordering, stock management/rotation, menu planning alongside the other cook
Skills:
• Background in and knowledge of various cooking methods is essential and being able to cook dishes from scratch to the highest standard using a wide range of fresh and high-quality ingredients.
• The ability to cook high-quality vegetarian and vegan food and readiness to meet all kinds of dietary requirements in preparing menus.
• The ability to stay organised and manage time effectively is key for a prep cook. With multiple tasks to handle simultaneously, being able to prioritise and work efficiently is essential.
• Tracking inventory and stock to make sure all figures are up to date and correct.
• Precision and attention to detail are crucial in ensuring the smooth running and operation of the kitchen.
Experience and Competencies:
• Proven track record within a culinary/kitchen environment.
• Food Safety Standards must be upkept to prevent foodborne illnesses, ensure meals are safe to eat, and maintain guest trust.
• Proven ability to follow recipes and instructions accurately.
• Computer literate in communications, inventory management and Microsoft software
• Ability to manage time effectively
• Personal values and hospitality skills
• Certifications in Food Safety & Hygiene
• Professional Cookery certification would be desirable
