A very good, professional chef is required to work for a French family in their privately owned villa in Corfu. This is a repeat client and so further details can be given on application.
You must be an great chef and extremely flexible, tidy, organised and hard working. Usually you are cooking directly for the clients and their guests, but there may be occasional weeks with paying guests.
The chef will be responsible for all shopping and cooking of 2 meals a day - usually lunch and dinner for anything from 2 up to 16 guests, although there will be occasional parties of up to 20-30 people. You must be happy to turn your hand to anything and nothing should be too much trouble. This job is not suitable for someone that is not flexible. You should be speedy and an excellent chef who is able to make use of all the local ingredients. There will be some days where there are no guests, and therefore some time off.
You should have a professional approach to work. This job is not suitable for people who want to go out and 'party'. This is a professional job and not for someone more interested in their social life than work.
It is important that you take pride in your work and are respectful of the kitchen and items in the household and keep everything clean and tidy. You must also be able to get on with the other household staff that have been there for many years (housekeeper/house manager). You will be working alongside a host, who you will share accommodation with.
You must be very discreet, friendly and presentable.
3000 Euros a month - Chef (extra paid for if an extra meal is required)
Accommodation is very nice in a lovely cottage, all done up nicely. If they ever rent out the property and they need your accommodation for the guests, then they move you to a cottage in the nearby town which is also very nice.
You have to make fresh bread daily as the bread out there is not good (so must be confident doing this). You have to do a fresh white and brown loaf every day, and fresh bread rolls for dinner.
They want the chef to be creative with the menus and not do the same thing every week, so if you are cooking for the same clients you must do different dishes every day.
Breakfast is avocado, cheeses, hams, tomatoes, beautifully presented fresh fruit salads, possibly an egg if asked. That starts around 8.30/9am and finish around 11am.
Then go shopping and pre prep for dinner and finish around 4pm. Then have a couple of hours off, and then dinner usually starts around 9pm for canapes, then 9.30pm for a 3 course plated dinner.
You should manage to get a day off a week if the villa has been rented to paying guests. There will also be times when the guests go out and you may not be required for dinner.
Accommodation will be provided on site. You must drive and be over 25 years old as you will be provided with a Hire Car.
A paid trial for the chef will be arranged in Belgium where you will be required to cook for a dinner party. For the trial you are expected to cook dinner, breakfast and lunch for up to 12 people to include making Fresh Bread rolls (white and brown), Selection of Canapes, Starter, Main, Pudding. All to be individually beautiful plated. You will be expected to do the shopping yourself in Belgium, all prep, serving and clearing.
